Modern European, Middle Eastern and Asian flavours are set to be the three biggest trends this year, according to the Food and Drink Trends 2018 guide from Bidfood.
Appearing on menus will be traditional ingredients and spices fused with Western dishes, shoreline fish and quality meat reflecting dietary choices from across Scandinavia and the Balkans, and basic cooking methods to create simple, fresh meals.
Rich, bold and spicy dishes will be sought after and achieved through everything from Japanese ramen noodle soup to Korean barbecue.
“Consumers today are being introduced to a variety of flavour and food combinations,” says Bidfood insights manager Lucy Pedrick. “As a result, they are becoming even more experimental and adventurous when dining out or cooking at home.
“We’re already seeing brands rise to the challenge and offer on-trend bold concepts and products to delight customers and keep them coming back for more.”
