Yen Nguyen is opening Yen Burger on Southwark Street in Borough at the end of June.
The Japanese urban-inspired restaurant will offer Asian-influenced burgers, combining ingredients such as Wagyu beef, chilli and kimchi mayonnaise and shiso.
Local bakery Bread Ahead will be making the bread buns every day.
Cod, vegetable and gluten-free options are available, with sides such as Asian coleslaw, steamed edamame beans and sweet potato chips.
The drinks menu will comprise Asian-influenced cocktails including a range of spice-infused aperitifs.
For interior design, Yen Burger will feature muted gold tones across two floors with space for up to 70 guests and an open kitchen.
Nguyen has previously worked in restaurants across the UK and Germany.
“Although I grew up in Europe surrounded by lots of great western food chains, I could never go a day without my mother’s delicious Asian cuisine, therefore I wanted to create something that is truly unique and combines western food with and light east Asian ingredients – an Asian burger,” comments Nguyen. “The opening of Yen Burger sees this dream come to fruition and I’m so excited to start welcoming guests into the restaurant”.
