The Sea, The Sea announces executive chef

Leandro Carreira has been appointed executive chef of The Sea, The Sea in Chelsea.

The deli, fishmonger and seafood bar by Bonnie Gull co-founder Alex Hunter opens on 26 April, with Carreira curating the evening menu with tasting plates, bowls and platters.

Sample dishes include Cornish seabass crudo with crispy parsley sweet cicely; squid with pine nuts, sake and beach herbs; and poached Scottish lobster with olive oil and pepper.

A selection of wines and Champagnes will be available by the glass.

A series of masterclasses will also take place, with chefs including Ikoyi’s Jeremy Chan and Edoardo Pelicano of Maos taking over the kitchen.
