The pastrami beef rib bun from Bun Club in Worcester has been named the StrEAT Food Dish of the Year at the inaugural StrEAT Food Challenge.
Cooked by owner Wayne Handley, the pastrami beef rib bun sandwiches smoked short rib between a milk roll, along with a spicy jalapeño slaw and a tangy marsala and raspberry sauce. The judges, which included Boxpark’s Dan Fullerton and Lee Desanges of Baked in Brick, were blown away by the time and effort put into the dish.
“I wanted a bit of theatre with the dish,” says Handley. “I’ve tried it at pop-ups in Worcester and everyone raves about it. As a chef, you’re always very self-critical – even when you get nice feedback, you always feel that it could be improved. It’s a long process – low and slow barbecue is not easy street food. It can’t be cooked on the fly; it has to be pre-planned and pre-booked. That particular beef rib I started at 4pm yesterday and didn’t finish until 4am this morning, so it’s lots of time and no sleep!”
The StrEAT Food Challenge 2019 Grand Final was held on 8 May at Islington Metal Works in London and was hosted by Christian Stevenson (AKA DJ BBQ). Finalists competed in four rounds including cooking their own-recipe dish. The three other rounds were the Technical Round, which saw the chefs cook a dish made with ingredients supplied by the event’s sponsors; the Frank’s Chicken Wings Round, which required them to create a chicken wings dish using Frank’s Hot Sauce; and the It’s A Wrap Round, which saw the chefs create a wrap using spices and sauces from Major International.
Steven Chatfield from Rok Kitchen won the Technical Round and Prasanna Callaghan from Crumpets Café was crowned champion of the Frank’s Chicken Wings Round and Major International It’s A Wrap Round.
